Go Fish — Go Eat!

Last week a friend of mine said she wanted to know how to make fish. I asked what kind of fish, she answered Salmon.

Wouldn’t you know, I just happened to be making Salmon this week. Actually, I try to make salmon once a week .

Salmon in particular is very healthy for you—and its tastes like chicken!  It contains omega-3 fats that help reduce inflammation, which can cause many health issues like heart disease, diabetes, some types of cancers and arthritis.

Here is a really easy and suuuuuuuper yummy recipe for Salmon.  Key item: foil!

Baked Salmon with Lemon

Baked Salmon

Serving Size: 2

1 lb Salmon Fillet
1 Lemon
olive oil
black pepper

Preheat oven to 350 degrees. Take a large piece of aluminum foil and drizzle olive oil in the middle.

Cut Salmon fillet  into two pieces. Place skin side down on olive oil. Drizzle olive oil over top. Crack some black pepper over the salmon and season with dried parsley.

Take a lemon and slice 2 thick pieces to place over the Salmon pieces.

Wrap the foil up. Take the Top and bottom pieces and fold up straight to touch. Wrap the 2 sides over until touching the fish. Fold the sides in.

How to Wrap FoilBake for about 20 minutes, or until no longer a deep orange color. I always test because I’m paranoid. Just take a fork and if the pieces flake apart, its done.

Serve with a lemon slice, and veggie sides.
