Fish on Sticks


I wanted to incorporate some fish into my menu for my dinner party potluck. Something easy, yet delicious. These kabobs were a simple and yummy option. I prepared everything ahead of time, and even cooked them up to an hour before serving. Not to mention the presentation looks awesome. I heard a few “OoooOohh”s when I brought them out.

The mango, papaya, and lime definitely add a tropical twist to this appetizer. You can even play around and add a piece of solid fish such as halibut if you like. Definitely mix and match!

Fish Kebobs

Tropical Seafood Kabobs
Servings 10

3/4 lb. scallops
8 medium shrimp

1 mango cut in chunks
1 firm papaya cut in chunks
1 green pepper in chunks
3 limes, sliced
1/3 cup red wine
3 tbsp. olive oil
1/4 tsp. black pepper

Soak bamboo skewers in water for a half an hour so they don’t catch fire on the grill.

Thread the bamboo skewers alternately with all ingredients
except the lime wedges. End each skewer with one slice of lime.

Combine marinade ingredients and brush on the kabobs.
Barbecue the kabobs brushing with the marinade often.
